Lunch- grapes, banana, smoked almonds

Dinner- lentil loaf

Snack- tin roof ice cream


Going to the store today without DH. Should be able to buy more veggies and what not.

Breakfast- Two slices of cinnamon raisin bread with earth balance

Lunch- Peanut butter and cranberry/orange jam on whole wheat, grapes, smoked almonds

Snack- pretzels, zone perfect blueberry bar

Dinner- stuffed cabbage, lima beans

Snack- tin roof ice cream :/

Snack- apple Soyjoy bar

Lunch- chicken pasta skillet, salad with balsamic vinaigrette

Dinner- grilled (muenster) cheese on whole wheat, cheddar potato soup with bacon :(

Snack- earl grey tea

Lunch- Flat Earth baked veggie crisps (garlic and herb field), banana, peanut butter (krema) and raspberry jam on whole grain

Dinner- stuffed cabbage, glass of cranberry juice, multivitamin

Snack- hot chocolate (haha)

Breakfast- Toasted sourdough english muffin with earth balance and raspberry jam

Lunch- Gala apple, 3/4 handful of almonds, peppered turkey sandwich (whole grain bread) with romaine lettuce, mustard, muenster cheese

Snack- 1/4 handful of almonds, Flat Earth baked veggie crisps (garlic and herb field), 1 c of Kashi GOLEAN Crunch! Honey Almond Flax cereal with skim milk

Dinner- lentil loaf, glass of cranberry juice (was going to have broccoli too but i'm too lazy. i know, i know...i'm getting better!*)

Snack- hot chocolate (see a trend? yeahhh.. i'm almost out so it'll end soon!), multivitamin

*The fact that I'm the only one who does the dishes in the household doesn't help the situation...

Lunch- Fried egg with colby jack cheese, romaine lettuce, miracle whip (all on a sourdough muffin), glass of cranberry juice, multivitamin

Snack- Flat Earth baked veggie crisps (garlic and herb field)

Dinner- Baked tilapia with carrots, celery, onion, zucchini

Snack- hot chocolate



My initial hope of actually posting pictures is starting to become further and further from reach. Sigh.

Welcome to my first Menu Planning Monday post!

This is going to be quite a hectic week for DH so I'm afraid I'm left to fend for myself most of the week.

Monday: baked tilapia with vegetables
Tuesday: lentil loaf, broccoli
Wednesday: holubchi (stuffed cabbage), salad
Thursday: chicken pasta skillet, garlic bread
Friday: lentil loaf, broccoli and zucchini (as takeaway)
Saturday:
Sunday:

No plans for the weekend as we will be staying at a relative's house.

Dinner- Hungarian Goulash, Garlic mashed potatoes, Glass of Earl Grey Tea with honey

Snack- Five freshmints tic tacs, Flat Earth baked veggie crisps (garlic and herb field), hot chocolate, multivitamin



Ehhhhhh. See what I mean? I'm workin' on it, folks. More fruits and veggies to come.

Here's my goal....

I plan on documenting every piece of food that I consume. Yes, this is possible! I have not necessarily been making the wisest decisions when it boils down to WHAT I am eating.

This is a problem.

So, starting tomorrow, I shall take pictures of everything - or almost, anyway. We shall see.

To kick things off, I would like to share with you a cookie recipe I found a few years ago. These are delicious!


Cranberry Orange Cookies
from bakingsheet.

2 cups all purpose flour
1 1/2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
3/4 cup butter, room temperature
1 cup white sugar
1 large egg
zest of one large orange (about 1 tbsp)
3/4 cup dried cranberries



Preheat oven to 350F and line a couple of baking sheets with parchment paper.

In a medium bowl, whisk together flour, baking powder, baking soda and salt.

In a large bowl, cream together the butter and the sugar, beating with an electric mixer until light. Beat in egg and orange zest. With the mixer on low speed, gradually add in the flour mixture, stirring only until just combined. Stir in the cranberries.

Drop dough by rounded tablespoonfuls (about 1 1/4-inch balls) onto prepared cookie sheets and bake for 9-12 minutes, until edges are very lightly browned. Cool for 3-4 minutes on baking sheet then transfer to a wire rack to cool completely.

Makes about 4 dozen.
